This Monday's snack was fresh, local, organic Butterworks Farm vanilla yogurt with our own Rumney SugarHouse Granola and fruit to create a yogurt parfait. Coming up Monday: the Rumney Rollup with some options available to substitute the peanut butter or the banana.
Monday, March 27, 2006 ---
School snack this week was fresh veggies and dip and a Pita bread triangle. Parents are welcome to help make a big batch of Granola in the Rumney kitchen on Sunday morning at 9:30 for us to use in school snacks. This coincides with the drama rehearsal so it might work out well for those of you who are "germ free"!

RECIPE: Rumney Roll-Ups
1 whole wheat tortilla wrap (We used La Tortilla Factory whole wheat wraps from Refrigerator section at Hunger Mountain Coop)
2-3 Tablespoons all-natural peanut butter (we used Shaw's brand essential creamy peanut butter with no added hydrogenated oils, just peanuts and salt)
A drizzle of honey (local product can be purchased from Mrs. Crandell)
1 whole yellow banana (not too green, not too brown!)
PROCEDURE:
1)Spread the peanut butter on the tortilla or wrap, covering the entire surface.
2) Drizzle a line of honey across the middle of the circle and spread lightly
3)Place the peeled banana at one end and roll it up completely
4)With open edge of tortilla down on a cutting board or place, carefully slice off the loose tortilla on side before you hit the banana. Then slice into one-half inch slices. Eat the ends!
5)Enjoy these bite-sized pieces for breakfast, lunch, or snacks.
TIPS: Pack in a lunch container rather than a plastic bag, to keep from smooshing. Also: Keep slices touching each other in the roll shape to prevent banana from turning brown.
OPTIONS:
Students have let us know that options and modifications are appreciated, so here are a couple: spread almond butter instead of peanut butter, or use apple butter
or chopped apples instead of a whole banana.
